Lemon Cake

When I told Bobby I was going to post this recipe on my blog, he asked me if I really thought it was "blog-worthy." I confess that normally I wouldn't, but I thought it might be fun to start blogging some of my Mom's recipes as a sort of tribute to her. She is actually a really good cook, and not all of her recipes are this easy, but this is a cake she has been making for as long as I can remember and I love it! She used to get so mad at me when I would scrape the lemon icing off the top and leave the cake.

Lemon Cake

1 box yellow cake mix
1 (3-oz.) box lemon Jello or pudding mix
3/4 cup oil
3/4 cup water
4 eggs

Mix all ingredients together and bake in greased 9x13 pan (or bundt) at 350 degrees for 35 to 45 minutes. Remove and allow to cool for at least 20 minutes. Poke holes with a fork (or thin skewers over the cake.)

Lemon glaze

1/3 cup lemon juice
2 cups powdered sugar

Mix lemon juice and sugar and drizzle over cake.

(I've seen that some recipes call for lemon cake instead of yellow cake for this recipe. I think this is way too lemon-y.)

This is one of my staple dessert recipes. I like to serve it with a scoop of vanilla ice cream and some fresh strawberries. It serves up really pretty for company. I am SO happy that I know about your blog now. I LOVE to cook and am already sorting through your recipes, seeing what I'll make first.

I will be making this one for sure, its just up my ally of simple and fast! I have never been much good in the kitchen, im a work in progress there.
I have a question about the ABA therapy that Franny is in. Is it through a private party or the School district? Luke was diagnosed with Aspergers Syndrome in January and I am thinking of going the ABA route. The school district offers a behavior therapy class that he has been in but its not one-on-one and he was picking up behaviors of other Autistic kids in the setting. And we tried a regular pre-school but i think that was a bit too stressful for him thus far.

Some of my favorite recipes are the most basic. I think posting some of your moms recipes is a great idea. I'm glad I stumbled across your blog. I feel like it was six degrees of separation. This may have been one of your Grandma's recipes that your Mom liked. I have had it since my kids were little.
