I promise this picture does not do it justice. I have got to get a new camera! This recipe also comes from Barefoot at Home. I added Grilled Lemon Chicken from The Barefoot Contessa Cookbook. I actually had to substitute spinach for arugula and rotini for fusilli because I couldn't find those ingredients here. Ahhh Kirksville.... It worked, though. I was really happy with it.

I'm going to try this recipe this week. I have decided that if you keep posting your favorite recipes, I can just come to your blog to do my menu plan each week. :) Thanks! You're my cooking inspiration all the time. If I can't think of what to cook, I just think, "what would Katherine do?"
